Doesn’t evaporation make liquid more condensed? One would think with similar names, both Condensed Milk and Evaporated Milk are one in the same and they are almost the same product. The main different you will find with both liquids is on comes as “Sweetened” the other as “Unsweetened”.
What is Condensed Milk?
Condensed milk is a “sweetened” substance used in many baking recipes – mainly candies and high sugary items. In order to produce Condensed Milk, Whole Milk is added with about 40%-45% sugar and heated until 60 percent of it’s liquid has evaporated.
What is Evaporated Milk?
Evaporated Milk is simply a variety of milks (Whole, Fat Free, etc) heated until 60 percent of it’s liquid is evaporated. The main difference here is there is no sugar added to this liquid – thus, creating an “unsweetened” product.
Even though both of these “milks” are similar in structure, they can not be replaced one for the other. If one was to change up a recipe using the oposite ingredient you may have an overly sweet dessert or an undesirable bland substance.
Should you keep condensed milk or evaporated milk on hand?
If you have a recipe that calls for Condensed Milk, but you have Evaporated Milk on hand… you’re in luck! There is a simple substitute conversation to assist you! Unfortunately, if you were in the opposite scenario there is no substitute. In the event that you have an extra can of Evaporated Milk on hand follow the simple instructions below:
1 cup milk of your choice
1 1/4 cup sugar
Heat milk and sugar in medium saucepan
Once sugar is disolved, let cool
*Don’t have evaporated milk either? Simply heat milk in saucepan until 60 percent has dissolved. After, add sugar.
What should I learn from this post?
When in doubt… keep Evaporated Milk on hand, you can always make your own Condensed Milk 😉
Sometimes when you’re in the mood to bake something you really don’t want to spend money on special ingredients or just don’t want to drive all the way to the store for one special item. If you’re like me and sometimes make cakes or cupcakes with buttermilk included in the ingredients you might not always have buttermilk on hand. Over the last couple of months I’ve read and have tested a trick of a substitute of buttermilk. All you will need is regular milk and white vinegar (or lemon juice).
Pour just under one cup of regular milk in a measuring cup
Incorporate 1 tablespoon of white vinegar and stir slightly
Let the liquid sit for 5 minutes. Use as much as your recipe calls for
This simple buttermilk substitute will come in handy once in a while when you are in a pinch for an ingredient you don’t usually have on hand. I’ll continue to try to keep you updated on more baking or cupcake ingredient substitutes, and be sure to come back for more cooking tips!
I started a cupcake blog because baking is fun! Most people might not agree and may think it’s not enjoyable, but what could be more interesting than making your own desserts from scratch. Plus, eating them fresh out of the oven… mmmm warm cookies and milk!
Not too sure who I got the baking “gene” from, both my grandmother’s are great cooks. Must be my natural desire of those tasty treats that keep me going back to the kitchen. Either way, when I do bake (usually on the weekends), I wanted to start a Baker’s Blog to show friends and family some simple recipes I find online, in cook books, on TV and those that I just make up on the whim.
* All recipes that I bake and post on this website have inspiration from one or many persons – whether it’s the actual recipe or if it’s just someone’s request for a new flavor thought. If I do grab a couple ideas from other bakers I try to make the recipe my own and not “steal” that person’s thunder. If a recipe is 100% from another source I will make reference within that specific recipe page.
Now on to the good stuff… why did I start blogging?!
First, it’s easy! Everyone’s doing it and there’s no better way to keep my fans up-to-date with all the great concoctions I come up with. Plus, it’s a great way to keep a visual record of all my recipes… all I have to do now is login to Fate Cakes and research which item I’d like to make on a whim!
Second, I wanted everyone to share the excitement I get when I bake. Cooking is such a relaxing thing for me, it seems obvious that I’d want to share that warm and inviting vibe with my fans and readers!
